Best Summer Desserts

With all the ripe fresh fruit about, it's time to start making some yummy pies (or other desserts). Share your favorite recipe.  :)

I just came across this recipe on NPR, and man, it looks so good, I am going to try making it once I find some plums: Zwetschgendatschi, A Mouthful That Captures The Perfect Plum.

I enjoy cherry pie, and I usually kind of wing a recipe together, something like:

(make my own pie crust-enough for the bottom and a top)
1-2 cans of cherries, or the equivalent amount of fresh cherries with pits removed.
4 tbls tapioca
1 cup sugar
a tiny palmful of salt
1/2 tsp vanilla extract
a dash of rum
1.5 tbls butter
1 egg white beaten
a wee bit of sugar

--Preheat oven to 400 F.
--Spread of the pie crust into a circle that's big enough to fit your pie pan, put it in the pan. Roll the top and put it on a floured plate. Stick both in the fridge.
--In a bowl, combine cherries, tapioca, sugar, salf, vanilla, and rum. Let it sit for 15-20 minutes. (sometimes I add in other random fruit just to mix things up a bit)
--Put cherry mixture into the pie pan, spread evenly, and then dot the top of the cherry mixture with the butter. Either lattice or vent the top part of the pie crust. (I like taking extra dough and making little animals or shapes to put on top)
--Brush the egg white over the top crust and then dust the top with some sugar.
--Put the pie pan onto a cookie sheet, cover the edges of the crust with foil. Bake for about 50 minutes or til golden-brown. Cook before slicing.

Raspberry Torte: A lawyer's favourite desert

Ingredients

    2 cups graham cracker crumbs
    1/2 cup butter, melted
    1/4 cup sugar
    1 package (16 ounces) miniature marshmallows
    1 cup milk
    2 cups heavy whipping cream, whipped
    4 cups fresh raspberries
    1/2 cup chopped pecans

Directions

    In a small bowl, combine cracker crumbs, butter and sugar. Set aside 1/4 cup for topping. Press remaining crumb mixture onto the bottom and 1-1/2 in. up the sides of a 9-in. springform pan; set aside.
    In a large saucepan, combine marshmallows and milk. Cook and whisk over medium-low heat until marshmallows are melted and mixture is smooth. Cool.
    Fold in whipped cream, raspberries and pecans. Pour into prepared crust. Top with remaining crumb mixture. Cover and refrigerate overnight. Remove sides of pan. Yield: 12 servings.

I usually only get one weekend a year here for this one, and it's simple elegance. I grab a couple handfuls of wild blackberries and add a heaping spoonful of table sugar to them in a bowl and stir. The gritty texture of the sugar helps grind the berries down quickly, and the juice of the berries dissolves the sugar. When it doesn't sound like there's sand in there anymore, pour it over vanilla ice cream. Told you it was easy!

I just made the Bavarian plum tart thing which I still can't pronounce:

Strawberry Fluff
1   package
(3 ounces) strawberry-flavored gelatin
1   cup boiling water
1 1/4  cups ice cubes
1   cup sour cream
1   cup
sliced strawberries (from 1-pint basket)
6 whole strawberries, for garnish

Directions
1. Mix gelatin and boiling water in 4-cup glass measuring cup; stir until gelatin is completely dissolved. Add enough ice cubes, stirring until ice melts, so mixture equals 2 cups. Put any remaining ice back in freezer.
2. Place gelatin mixture, sour cream and strawberries in blender. Process until smooth, 1 to 2 minutes.
3. Pour into 6 stemmed glasses, dividing equally. Cover with plastic wrap. Refrigerate until set, 3 to 4 hours. Garnish each with fanned whole strawberry. Makes 6 servings.

My Mom use to make something like this but used melted ice cream instead of sour cream and she just chopped up the fruit.

We make easy peasy icecream with frozen fruit and yoghurt put in a blender any kind of fruit works. The yooghurt  should be greek or turkish because its thicker. You can sweeten it with honey.

I tried to make Jello Instant pudding with almond milk.  It did not set up properly.  I will try the cook it kind to see if that works any better.  It tasted good though  :)

Why is that?  It is pronounced just like its spelling.    >:-)
