Coconut Shortbread Cookies

I have a post somewhere on the possible benefits of coconut oil as far as weight loss aid and a possible (not sure at all) mental aid.  I have no idea as far as hormonal effects either the things I have read on coconut elude to effecting them how much and or how the effect works not sure. I have been using coconut oil to help me lose weight and it seems to have helped but melting oil in coffee seem to work better then the cookie but cookie tastes way better:)

But on to the good part I have taken a normal shortbread recipe and altered it to include the coconut oil and they turned out darn tasty so here is the recipe.

Coconut shortbread cookies

2    cups flour
1/2 cup Icing Sugar (American versions not sure one but not a biggy)
1/2 cup Cornstarch
3/4 cup of shredded coconut
1 cup Coconut oil
1 teaspoon vanilla (with coconut oil optional)

Simply add dry ingredients in bowl then add oil/butter and mix with hand till forms a flakey dough.  Continue to mix and kneed dough till it is a nice smooth consistency.  Depending on oil may want to cool dough but not to much if over cool as you cut dough it will crack.  Form the dough into a strip or a rope then cut cookies into desired size.  Thickness should be around 1/2 inch.  Pan cookies they will not spread much at all.  Lastly bake them for 40 minutes at 300 F.  When they are done there may be a  slight browning of the dough but look mostly at the spots of coconut for a nice golden brown and more white on the dough itself. 

Let cool and enjoy!:)

(was supposed to be butter at  1/2 cup but wanted more oil in recipe for health reasons and actually did a batch with 1 1/2 cup oil worked but little soft)  Could also use another oil preferably neutral in flavor and keep in mind the thickness of oil vs butter vs the coconut oil moire liquid like the more dry ingredients or less oil to hydrate the dry ingredients.  You could also adapt a different type of shortbread recipe basically insert oil for butter.

Wow wasn't even finishing proof reading good to there is a coco nut out there lol:)  I hope they turn out well and the virgin coconut oil was not cheap but for health what the heck and it taste great in the cookie:)
