"Silent Night" is also my favorite.  But I love to play it as it was first written, on the classical guitar with a children's choir.  It's hard to imagine anything prettier.

I'm very fond of the melody for God Rest Ye Merry, Gentleman and We Three Kings.  Kind of a toss up.
