So I've been thinking really
hard about all this healthy
eating habits and good start
to the day stuff a lot.
I mean, I'm a bit older now
and it would be nice if I took
better care of myself like
all of you do. So I decided to
start with breakfast food
that I like. Bacon. A pound
of thick cut bacon, cooked
completely crisp

You can't have just bacon,
of course. That wouldn't be
a healthy decision, and after all,
the point of all of us sharing
our dishes and encouraging
one another to do better with
our eating habits is to enjoy
the benefits of a healthier life.
So I made a sauce.

In a saucepan I mixed:
2 cups sugar
1 cup light corn syrup
1 cup water
1 teaspoon vanilla extract
Bring it it to 250° F then
put the bacon (remember the bacon?)
into the boiling sugar. From
here on it's constant stirring
over medium heat until it's 290° F.
Then in goes 3 tablespoons of
butter followed by 3 teaspoons
of baking soda. Stir vigorously
until frothing, then pour on a
sheet pan and pull towards
edges quickly. Allow to cool.

Smash and enjoy.

bacon brittle. Recipe yields
about a pound and a half.
You might want to add salt
if you're on Spiro.
