I second what Max said- ask local surgeons for pictures and their experiences. There's TONS of surgeons out there who do this procedure, and some near you might not be well known but still do great work.
My surgeon (without my even asking, which was comforting) explained exactly what she does to avoid dog ears- so I would ask them if they have something they do, and what it is. If they don't do anything to avoid them, I'd talk my business elsewhere. I had also seen some results from my surgeon of people roughly my size, but had I not, I would have asked to see some.
She did describe to me how she does the surgery differently for larger guys versus smaller guys as well, and which she thought would be most appropriate for me. For example, on nipple size, she said that she has 2 different templates for size, and she gives larger guys the larger nipples if it isn't mentioned because larger men just tend to have larger nipples, but will absolutely go with whatever size a patient asks for. Finding a surgeon that is completely happy to explain their process for larger men, and you being comfortable with that process is what you should try to find.
