I just made this and quite enjoyed so thought to share.
Orange sweet potatoes, boiled and mashed with a good amount of butter, a handful of chopped fresh curry leaves, heaped teaspoon of dried fenugreek leaves , bit of black pepper, salt to taste( I have a fair bit) put back on heat as ness.
I had this with homemade ( though not by me)pork, chilli and fennel sausages( gluten and grain free) and coleslaw.

Question: could you clarify what these leaves are?

chopped fresh curry leaves

I suspect you are referring to coriander or cilantro leaves for those in the USA. I've researched a bit and have yet to find a curry plant.

Hi Laurie , no but I'll do my best to find another name, they have a sort of slightly burnt buttery flavour to my mind
