Only scratch buttermilk or sourdough pancakes. Sometimes I use part whole wheat or spelt flour. I always add some wild huckleberries.
Gotta cook them in cast iron.
Then I add butter (real butter), a light drizzle of maple syrup, and top with two over-easy, free-range eggs. Sometimes sausage links or bacon.
And ALWAYS accompanied with lots of fresh ground, dark roast coffee.
Pancakes are also my go-to supper when I can't think of what to cook.
