honestly, they were kind of a pain lol. they took a while to put together and they got cold, so I had to throw them in the microwave... twice! Everything was homemade, and I still don't have a good caramel sauce recipe yet. it tasted fine and when it was warm the texture was great, but when it cools down (and it cools down fast) it gets clumpy and the sugar crystalizes and the texture gets gross. Then when I went to do the ganache things went downhill... I had a blowout in my pastry bag and made a huge mess and I wanted to cry! Next time I might just buy caramel and chocolate from the store, and I'm not gunna cut the pancakes into rectangles again.

oh, and as for the deep fried pancakes, they were really good but I felt ashamed eating them haha, it was just too much! I think I went overboard on the toppings, I definitely want to try them again though, I might just put some strawberry jam in the middle and then cover them in powdered sugar and call them my "jelly donut pancakes". My friend and I have been talking about doing a restaurant some day so I've been coming up with a lot of ideas. And there's a coffee company that has all sorts of cool flavors and I'm going to order a sample pack from them soon and make some cool dishes that pair with them, I'll probably start doing those in a couple weeks :)

I know this looks like a big breakfast, but I came nowhere near finishing it lol

I decided to go spicy this weekend  >:-) >:-) >:-)

First up we have a fried chicken sandwich. I coated the chicken in an extra spicy seasoning, chilled it, then I did a spicy buttermilk batter and fried it. it had some nice kick but it could have been spicier lol. I did homemade biscuits for it and topped the chicken with sharp cheddar, pepper jelly, bacon, and jalapeno honey butter. The flavors were great, the cheddar and the pepper jelly kinda fought each other a bit but worked out really well! Oh and for a side I cut up some baked potatoes, tossed them in a frying pan, then deep fried them for a minute and tossed them in the same spicy seasoning as the chicken. if you've ever had red hot potato chips, that's kinda what I was going for, they were great!



and for dessert we have.... bourbon jalapeno pineapple upside down pancakes! I was amazed at how well all of those flavors worked together! I soaked the pineapple in bourbon and then topped it with brown sugar, then I put it in the frying pan with some butter and a jalapeno slice in the middle and then poured the pancake batter over it, yum!

Just coffee and two pieces of buttered toast with a sprinkle of cinnamon on them for me thank you!. I need to buy more Spun Honey and peanut butter.

So many tasty looking dishes in this thread - I think I gained weight just reading through it!

I love cooking but I don't have as much time and energy for it as I used to.   I also used to bake a lot, but I've cut way back as that wasn't so good for my waistline...

I know might make a few 'food enemies' over this, but I often eat things other than 'breakfast food' for breakfast.  I usually don't like heavy food in the morning, I don't really like bacon or ham (though some kinds of sausage are fine), and I also have a mild wheat and barley allergy and a much worse oat allergy :(  Somehow rye is fine though ???

I do make scrambled eggs fairly often, with various kinds of mix-ins and toppings.  Some of my more regular additions are:
Spinach or chard and feta (sometimes with onions, mushrooms, or lemon juice)
Tomatoes, arugula, black pepper, and pecorino (romano or toscano, whichever I have handy)
Garlic, onions, black pepper, and yogurt or sour cream (and sometimes a little cheese)
Salsa verde (and less often salsa roja or salsa negra)
Grilled asparagus and mushrooms (sometimes with shrimp or crab)

I also make a sort of grain-free porridge from ground flax and chia seeds + whatever I feel like adding for the day.

Other things I commonly eat for breakfast are salads, slaw, cooked vegetables, and light leftover soups (anything that's mostly clear stock or broth and some vegetables and maybe a little meat).  I'm especially fond of slaw with a vinegar or fruit-based dressing (usually mango, lime, or passion fruit) and a bit of fish or shrimp.

I do occasionally include some less healthy options though:
Various types of sausage
Fried potatoes, sweet potatoes, or plantains
Fried apples, pears, peaches, or cherries
Pancakes (made from corn, buckwheat, or coconut flour)
Rice pudding (homemade, usually dairy-free)
Baked goods (homemade or store bought), usually gluten free, but sometimes I just want wheat and I'm willing to pay the price!

so I bought a sample pack of coffee flavors from this company that does some interesting stuff, and I decided to make food to go along with each flavor. I'm going to be doing one flavor per weekend for the next month or so, and first up was Maple Bacon. I made maple bacon bourbon brown sugar sticky buns!

also, I started a new Instagram account for my food! A friend and I have been talking a lot lately about doing a restaurant some day, and since I've been really creative lately I wanted to start an account to kind of generate buzz. so please follow my new account, @lookwhatmaddiemade

My favorite breakfast treat is kind of a variation of french toast...
Breakfast for my special friends, I make a Monte-Christo sandwich.  It is a variation of a toasted cheese sandwich with ham or bacon, cheese, and perhaps a cooked egg inside.  It can also be dipped in egg batter and pan cooked like french toast.    I prefer to eat it topped with maple syrup or jelly.

oh and for the bacon I just baked some bacon strips that I sprinkled maple sugar on, then I just chopped them up really fine

WowWee! Danielle and Maddie!!! Both of those dishes look sooooo delicious. Maybe I'll do something like for dinner. I think for now, I'll just make a Tuna Melt with mild cheddar and bacon. Gota have the bacon  ;D. BTW, I love your new avatar Danielle.

Mmmm, I love biscuits and gravy  :icon_dribble:

I had blueberry yogurt with crunchy stuff in it and snacked on cold cereal out of the box

Oh my Maddie! You certainly have a sweet tooth and an amazing knack for experimentation. I love carrot cake. When I first saw your picture, that's what I thought it was. Yum!
