What are your favorite types of cookies?

I think I usually prefer soft vs hard.

I love oatmeal cookies, adding raisins is good.

I like snickerdoodles.

I like molasses cookies.

Oreos are good too!

I also prefer soft. White macadamia nuts are my favorite. I also like chocolate chunk, oatmeal (with or without raisins), peanut butter, snickerdoodle, egg nog, etc...

Nothing against raisins but every time I see raisin cookies can only think they could have been chocolate chip cookies. I mean you bothered to make cookies and you thought it would be better to put raisins in them as opposed to chocolate chips?

Sugar cookies are good too!

Sometimes I like lemon cookies.  Sort of like Oreos, but with lemon flavored creamy filling.

Then there are the ice cream sandwiches!  Not thought of as a sandwich or even a cookie, but usually as an ice cream confection.  But the outside parts I guess are cookies of sorts.  I would not eat them without the ice cream middle though.  Some are good, others are not so good!

My Ultimate Chocolate Chip cookies, followed by my oatmeal raisin cookies.



Michelle's Ultimate Chocolate Chip Cookies

1 c butter, softened         2 sticks
1/2 c white sugar         100 g
1 1/2 c packed brown sugar   310 g
3 eggs
1 tbsp vanilla extract
1 tbsp blackstrap molasses
3 c all-purpose flour         375 g
1 tsp baking soda OR 2 tsp calcium carbonate - baking grade
1/2 tsp salt (optional)
1 tsp ground cinnamon
2/3 tsp nutmeg
1/2 tsp allspice
1/2 tsp ground cloves
1/2 tsp ginger
2 c semisweet chocolate chips

Preheat oven to 350 degrees F.

Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and molasses. Add baking soda to batter along with salt if needed. Add in the spices; cinnamon, nutmeg, allspice, ground cloves, and ginger.  Stir in flour, then chocolate chips. Drop by large spoonfuls onto ungreased pans.

Bake for about 10-12 minutes in the preheated oven, or until edges are nicely browned.




Soft Oatmeal Cookies
        - Prep 15 m   Cook 10 m   Ready In 2 h
        -
1 c butter         2 sticks
1 c white sugar      210 g
1 c packed brown sugar   200 g
2 eggs
1tsp vanilla extract
3 tbsp blackstrap molasses
2 c all-purpose flour      250 g
1 tsp baking soda      2 tsp calcium carbonate baking soda (salt free)
1 tsp salt         Optional for salt-free
1 1/2 tsp cinnamon
2/3 tsp nutmeg
1/2 tsp allspice
1/2 tsp ground cloves
3 c rolled oats      270 g
1/4 c milk
1 1/2 c raisins

In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla and molasses. Combine flour, baking soda, salt, cinnamon and other spices; stir into the creamed mixture. Mix in oats, and finally the milk and raisins. Cover, and chill dough for at least one hour.

Preheat the oven to 350 degrees F  Grease cookie sheets or use parchment paper. Roll the dough into walnut sized balls, and place 3 inches apart on cookie sheets.

Bake for 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Don't get mad at me :) but I added 50% more chocolate chips :)

I will definitively be making them again.

More chocolate chips is always good.

Try adding 1/2 cup of cocoa powder!  Chocolate chocolate chip cookies!

Or, toss in a cup of crushed pecans!

I've also made the oatmeal cookies with white chocolate and toffee chips added in, and of course pecans are welcome there.

Dear Wendi:
YES, I share or give away the majority of what I bake and cook, otherwise I would have to buy several sizes bigger clothing...  and I would lose my girlish curves and figure.

I put half of them in my freezer for  later use, and I will give a small baggy full to each of my friends in my gym-gals group this week and I will take some to my office to share with others.

My recipes produce enough dough for 60-80 cookies (using a 50 mL cookie dough scoop), so I often make up a batch of dough, form it in balls, and freeze them in little 'cookie pucks', ready to bake.

When company comes over, I can heat up the oven, grab a few cookie pucks per guest, and have fresh baked cookies for company.  It also makes the condo smell wonderful!

Dear Chrissy:
I am usually eager to get the oven hot and bake the cookies so that I can enjoy a few of them still warm out of the oven....   mmm, mmm, good.

I sometimes freeze cookie dough and also bread/pastry/pizza dough... makes it easy to start baking when I feel the urge... which is all the time!!!!
