I like to eat certain spicy foods and it tends to make me have diarrhea, if i took my pills 40 mins before eating the spicy foods then 10 mins after that i have diarrhea is it considered a missed dose?

I wouldn't worry about it.  You should be absorbing quite a lot of the medication by this that time.  Is it perfect?  No, but I wouldn't consider it a missed dose.

I'm not a doctor but here is my common sense take.  If you vomited I would consider it a missed dose.  Diarrhea no that is not a missed dose.  The time it takes to get from your stomach to being passed ( pooped  ;D ) is a lot longer than 10 minutes.  The pills are still dissolving in your stomach.

I am not a doctor but hope to play one on T.V.  :D

All this would not be question if you would take your pills sublingual (let them dissolve under your tongue).  Once tey have dissolved, wait about 10 minutes and after that you can eat as much spicy food you want! (I might want to come buy and share some of it with you )

Have you considered an anti-diarrheal medicine?

That's not how your digestive system works. You have three major parts: stomach, small intestine, and large intestine. Food spends 6 to 8 hours in each section. The stomach breaks food down. The small intestine absorbs nutrients. The large intestine absorbs water. Now this is the oversimplified version, there are other actions going on like bile being added, etc. Diarrhea is when the large intestine doesn't absorb all of the water. By that point, nutrients have already been absorbed, including any oral medications.

Diarrhea is not from what you just ate, less than an hour before. It's most likely from what was eaten there day before. So if you're eating spicy food nearly every day, like I often do, it might appear to be that it's that quick.

All this is assuming you aren't doing something outside the norm. Any kind of gastric bypass or bariatric surgery would change that. Other outside factors such as food poisoning or weight loss medications may also influence the time frame.

BTW, I went to school in the medical field.
