I had similar issues with allergies, albeit not quite as bad. I'm allergic to the coating found in most extended range string packs. Fortunately DR strings don't cause a problem for me, but it just means I need to special order a $40 pack of strings when it comes to restringing my eight string.

I'd love to have an 8-string (to let out my inner Meshugga, or play "Designing The Enemy" by Fear Factory), but Ernie Ball doesn't make Cobalts for 8-string, and I'm not a big fan of coated strings (especially since if the coating wears off, you're left with your fingers contacting the nickel string underneath). So ONE OF THESE DAYS, I'll replace the PRS SE Seven, 7-string that was sacrificed in the name of refretting my Taylor 12-string (oh well, I didn't like the relatively thin neck my PRS had - I play classical style with the thumb behind the neck, and thin necks make my hand feel like it's trying to act like a C-clamp on the neck).
Some of my old 7-strings:
Schecter Jazz 7 (relatively rare) - I love the sound of semi-hollows at high gain, they're soo throaty IMO

Schecter Omen Extreme 7

Danelectro MOD 7 (a cool guitar, with a weird pickup selection/switching system)

Maybe I'll get another Jazz 7 (if I can find one again - Schecter only made them in 2000)
