Potatoes O'Lori
Start with Potatoes O'Brien. Cook per directions. While cooking, whisk three eggs and season as you would scrambled eggs. When the potatoes are just starting to brown, pour in the eggs. Keep stirring until the eggs are done and throw it on a plate.
Top with shredded cheese. I prefer the four-cheese Mexican style (not Taco style).
Then add Chunky Salsa (not Picante sauce). If you like avacado, maybe some guacamole.
Then I top it off with a dollop of sour cream.
NOTE: 1 dollop = 3 to 4 spoonfuls
Spoon in some locales is referred to as a
ladle.
