The USA has great bacon really thin so you can crisp it up. Australia seems to go for a thicker cut which is difficult to crisp, still tastes great. I've never been a BLT girl but I love bacon toast sandwich, preferably with cream cheese on the toast.
Never thought of keeping the fat/grease, what a great idea. The added flavour would make a sort of frying stock.
