I think for the NCAA, an AFAB athlete can compete on either the women's or the men's teams until he begins testosterone.  An AMAB athlete may only compete on the men's team until she has been taking estradiol for at least a year, I think, after which she can compete on women's teams.

The guiding wisdom in the NCAA and some tasks forces is that FtM can play on women's teams until they start testosterone, and then are immediately ineligible for women's teams. As far as I know, an FtM can start playing on a men's team before hormones.

For MtF, they have to be on estrogen for 1yr before they can play on a women's team.

Do a Google search for "NCAA transgender".  One of the first hits will be a PDF file named "Transgender_Handbook_2011_Final.pdf".

I came across this story of a Canadian MtF cyclist.

Cliffs': in 2004, the International Olympics Committee decided that athletes must wait 2yrs after SRS to compete as their new gender (though this may be different for FtM, I'm not sure).

By co-ed I'm assuming you mean mix gender team. If it's in any sort of competition organised or under the governing of FIFA (-> CONCACAF -> USSF -> ...) and the players are 11 years old or older, then the team must be single sex.

There are lots of co-ed intramural teams; I suggest joining one (or more) of those.
