Booths??!! Posh bird here! ha ha! Don't have a Booths near me unfortunately. Love popping into the one in Keswick though. It's a bit of a trek for some cheese! lol!

I live in an area that has a lot of Cuban, Puerto Rico, and Caribbean influence.

When my sisters on the eastern side of the pond refer to food as hot: Are we speaking jalapeño hot, Tabasco hot, or scotch bonnet hot?

Im trying to get a reference. I've heard some say the eastern side of the pond don't do the hot like Americans do.
Just as an example when I have morning eggs they are generously covered in a Mexican sauce called Tapatio. Which i think has a little bite.

I would say hot is vindaloo which is significantly hotter than tabsco or tapatio. A Phal is another level again. I'm honestly not sure that the US has anything approaching that heat level. I've certainly never had any mexican food that I would consider all that hot.

I'm not a vindaloo eater, I would say a madras is my upper limit. Sorry for all the curry references lol! Davina seems to have an asbestos mouth as she seems to regularly cook Vindaloo!

Do you have many proper indian restaurants over there? I forget sometimes that we have a very significant curry culture over here compared to other places. There is an Indian takeaway or restaurant in pretty much every town and village. And a chinese, and about six kebab shops too!

And no, I have no idea why the rest of the world thinks we don't like spicy food. We took over india for 200 years to control the spice trade because we love it so much!

I think everyone sees the british classics and thinks that's all we eat but we can be quite creative with spices and herbs. Chicken Tikka Massala is a british not indian creation after all, as is the Balti.

The states have some very good Indian and Tai restaurants. I learned early order the mild first before jumping in to the hot. None in my immediate area. I do like both, I like the heat if it is for flavor. If it's hot just for the sake of heat I don't care for it.
We can get some chilli that has a good kick.
I worked with a Vietnamese guy that brought in some little red fire cracker looking pepper that the Mexicans I was looki6at tried once. They looked very uncomfortable.

I just found a recipe for it. Im going to try it. It looks tasty.

What is your take on American smoked meats? I do mine in an offset smoker. Takes about 6 hours to do a rack of ribs. About 7 for a 20lb turkey

My partner loves really hot food. I love hot food too though step it down a tiny but. I introduced him to the Jerk chicken paste with scotch bonnets from a corner shop in Birmingham. I also doubled up the amount! It's very hot but not loads of sauce so very manageable.

Tonight just had my favourite Moroccan Meatball Tagine. That cuisine is just warming with its spice, but very tasty.

Green Thai veggie curry with coconut chilli and lemongrass rice.
Had some onion,potatoes green beans red and green peppers needed using so stir fried them in green curry paste and added coconut milk. Forgot to add lime juice.
Quite mild as I  can't do really hot at 68

I think the thing that surprises people is how widespread world foods are here. It's not just the major cities. You can go to pretty much any reasonable size town and choose from Morroccan, Indian, Italian, Chinese, Vietnemese, Thai, Japanese, Lebanese, Mexican, Spanish, French, Greek, Kebab shops, all the usual US fast food chains and British of course. With all that inspiriation we tend to get a bit creative in the kitchen at home. You've also got all the bakerys, cafes and tearooms, pattiseries. Even some of the supermarkets have good choice.

Love Thai curry one of my favourite things to cook as it's so easy to whip up a paste and be done.

Texas BBQ is one style. You have Texas, Kansas, Carolina and alot of regional stuff. Some use rubs, other use marinade. Carolina use white BBQ sauce. 
You then have the meats; brisket, ribs (pork and beef), sausage, chicken and pork butt. I've smoked cheese and eggs.
I can usually do ribs in about 6 hours and brisket can take 8 to 12+ hours.
It's a lifestyle. You are stuck near your smoker the whole time. I use wood. If you use pellets it's more fire and forget.

I bet that stuff just falls off the bone. I dont have the time for to spend doing that and if your smoking outside, You wouldn't be able to. guarantee the weather would be with you all day very often!

It really does. And you can adjust flavors by different woods. I usually stick with cherry, apple and peach. Mesquite and pecan (pronounced with a long a sound) can give meat a bitter taste
