We can get the hardwood reasonably easy.
For my sisters across the pond a pellet smoker would probably be better. Less real-estate and less hassle.  You need some room for a decent size smoker.

If you ever come to the states try the hole in the wall smoke joints. The chain places aren't as good.

Maybe, pellets are probably the way forward but you couldn't be running a smoking BBQ here for that length of time. The neighbours would go ape sh*t!

An 8"x 2"x 5' american cherry board (one of the cheaper hardwoods) is £155 exc delivery. I don't have that sort of money to burn! I would rather turn it into some furniture.

Here you can get wood specifically for smoking.  The stuff for building usually has some chemicals that you don't want to eat.

Tuesday I had a grilled Swiss cheese sandwich.

Wednesday I had some ham, and made two ham and Swiss cheese sandwiches:  one for lunch and one for supper.

I had Chicken Saag with rice. Somehow it blew my socks off, not quite sure how as I only used 1 tsp of mild chilli powder. Used a fair bit of ginger, and used ground cloves instead of whole as I'd ran out but that was close to Madrass heat!

Yesterday I had aubergine and mushroom ravioli in a red pepper,spinach and parmesan sauce. Not exactly on diet here am I!
