I made enchiladas with tortilla chips and guacamole, never made enchiladas before but it was fairly easy and inexpensive mostly because most of the ingredients were on the "FREE TABLE" and mama Virginia's cupboards are quickly becoming bare and we're hardly halfway through the month  ::)

Anyway, it seem to come out good but I felt like a contestant on one of those cooking shows and I'm pretty sure my butt will turn into a human flame thrower by morning

Superficial fanny kissing friends are a dime a dozen, a TRUE FRIEND however is PRICELESS

Tomorrow is Sweetie's birthday. She requested beef wellington. Usually we have it with napoleon for dessert on the anniversary of Waterloo.

Duck breasts with raspberry sauce
Roast potatoes in duck fat
baby carrots
haricots verts
flourless chocolate cake
1989 Chateau Mouton Rothschild (been saving this for many years!)

Lefse (A Norwegian potato based flat bread), filled with Dungeness Crab, picked red onions, capers, red pepper, parsley and a touch of sour cream.  All made by me from scatch.  Well I didn't catch the crab :D For desert a short bread cookie called Spritz, and some local chocolates from Feve.  All with a lovely French sparkling Rose.
