Rachel's Cheese Stuffed Mushrooms

Ingredients
3 or 4 large flat mushrooms (such as portabello)
grated cheese (pre-grated or grated yourself)
Wash the mushrooms
With a teaspoon scoop out the gills and remove the stalks (might want to wash them again to clean them down)
Sprinkle the grated cheese in the now bowl-like mushrooms
Slowly grill them on a low heat setting for half an hour to ensure the cheese is melted and the mushroom cooks
Up the grill heat so that the cheese becomes crispy and browned off on top
Once browned off microwave the mushrooms for two minutes in a bowl or deep sided plate
Use the resultant mushroom juices as a gravy stock if you wish to do so
Serve with the condiments of your choice

That sounds yummy! Who put the "fun" in "fungus"? That's right, you did!
I think I would like to try that one during my next upcoming vegetarian kick. I still have too much "guy muscle" left and cut proteins periodically to lose it.

Yummy, I love musrooms.
If you want to spice them up a bit include some blue cheese as well - gives it extra bite!
