It's fruitcake season. How do you feel about fruitcake?  It's a Christmas joke to some people and some people love it. My dad actually likes fruitcake so I always make one at Christmas. My dad likes some weird stuff because he grew up eating stuff my grandma always made. He also likes potato candy. What a pain to make that is!  For me what truly makes fruitcake disgusting is the candied fruit. So I use dried fruit in mine. Dried cherries, apricot and pineapple. I also use macadamia nuts instead of walnuts.

A properly made fruitcake is a delightful treat.  Yes, dried fruit is far better than 'candied fruit', with the chemical bleaching, processing, chemical flavor and color addition.  Figs are another fruit that I like in a fruitcake.

Macadamia nuts instead of walnuts is a nice touch.  Clever!  I bet you'll have a smoother flavor and texture.  I'll have to try that.

I've always thought fruitcake was disgusting for the same reason you do.  I love that you make your dad with different ingredients.  Does he miss the candied fruit?  I will need to try your recipe.

I hate Christmas pudding and I avoid cake in general, especially fruitcake.  At Christmas, my mother used to make, especially for me, something called Chinese Chew, made entirely with chocolate, coconut and chopped candied fruit.  I liked it when I was young but I eventually asked my mother to stop making it with me in mind, as it was so sickly sweet.  With hindsight, it would have been nicer with chopped dried fruit instead of candied fruit.

He actually likes it better with dried fruit rather than candied fruit. Even my brother likes it.

Here's my recipie.

3-5 cups of dried fruit. Depending how much you like in your fruitcake. I use cherries, pineapple, aprpicot and golden raisins. You could also use dates, figs or currants.
1 1/2 cups of macadamia nuts. I chop them roughly with a knife. The food processor chops them too fine.
2 cups all purpose flour.
1/2 tap baking soda.
1 tsp each:
Ground cloves.
Allspice.
Cinnamon.
1/2 tsp salt.
1 cup of softened butter.
2 cups packed brown sugar.
6 eggs.
3/4 cup apple juice.
3/4 cup molasses.
Preheat the oven to 275 degrees .
Mix the flour, baking soda, salt and spices together.
Cream the butter and then beat in brown sugar.
Beat in the eggs one at a time.
Mix together apple juice and molasses then beat it into the butter mixture alternately with the flour and spice mixture.
Lightly coat the dried fruit and nuts in sifted flour (it keeps them from sinking to the bottom of the batter) and then fold them into the batter.
Pour the batter into a greased tube pan and bake for 3-3 1/2 hours .
After the cake is cool wrap it in wax paper and keep it in a airtight container. This is a heavy cake but it comes out moist,

I like fruitcake. There's only one opportunity a year to have it, so I always have a piece.

I notice that the candied fruit is only around at Christmas.  Since I use dried fruit which I can buy or even make is available all year I can make it anytime. I made a fruitcake last may.

I like it at Christmas, if it is well made, with a nice hot beverage. I'm not a huge sweets person but seasonal goodies are nice.

Can't speak for other brands, but mine is awesomely tasty [emoji16]. I chuck in just about anything that isn't nailed down, then soak it in various booze for a good month.

Door stop.

Stollen is good though.
I'm with Viktor, although since we adopted dogs it's been rubbish at that too!
I quite like Christmas puddings though, well good homemade jobs.
It's a bit exciting now we've hit December.☺️

My Father in Law (lovely man) was a member of Lion's International in Adelaide and they had a Christmas Fruit cake that was well known. Every Christmas he would buy a cake for each family group including my wife and I and give them as a gift on Christmas day.
Every Christmas Eve I would take the previous years cake, still in its box and throw it in the bin in readiness for the new one.

Even our dogs turn up their noses at fruitcake. If they won't eat it, it may as well be a doorstop. The last time we had one, even the mice left it alone ... no good for baiting traps.

Australian mouse trap. Lay a piece of corrugated sheeting on the ground. The mice go under the sheet to hide. Drop fruit cake on top of corrugated sheet to kill mice - voila'

Wow Memories. There was only one fruitcake recipe I ever liked and no one in the family can find it. My Grandmothers. What made it so great is it had a ton or rum in it and on it. Now i'm older I know why. She had 6 kids and ended up with 24 grand kids.
