With regards to weight gain, I did gain weight... 20 pounds in two and a half months! However, it was almost entirely muscle. It bulked up my arms, shoulders, back and waist pretty significantly. I had extra fat prior to starting T but that started to melt off/migrate to a pot belly during this time. Right now I'm working on losing the rest of that. So I was actually glad I gained muscle-weight during my eat-everything phase, since having the broad upper body was something I wanted. But it'll be different for everyone, of course.
