I have been canning salsa and well there is usually some left over that won't fit into my 6 quart jars and thats for me t eat with corn chips.. yummy

Oh canning salsa is easy

cut equal amounts of "roma" tomato's, onions and green bell peppers diced to around 1/4 inch sq and add a few spoon fulls of salt and some garlic minced and some oil ( about 1/8 cup) and same for vinegar and some cayene pepper lots of it and if you have hot peppers add them too. Heat on stove in a stainless tell pot till it gets hot and saucy then add a can of tomato paste to thicken if you like and then fill jars and "wipe tops with paper towels to get rid of any spills around the ring" then add the tops and twist tight with fingers and put in presure cooker and get it to about "5 to 10 lbs of pressure and cook for 20 minutes". Then turn it off and let cool and remove and store away for when your ready to eat salsa

I also like to add other light veggies like yellow squash or zuchinni or maybe other peppers like banana peppers. They too are also diced into small 1/4 inch by 1/4 inch cubes, ok maybe bigger but small as possible

Today to celebrate finally being able to afford a decent set of Breast Forms, I had lunch at Fish349 again.  Cajun Seafood Gumbo.  I don't know how authentic it was but it had okra in it and was delicious. :)

PS- love the sound of the salsa M2. I will have to try it seeing I am always looking for ways to justify having a pressure cooker.

  Labor Day at the cabin, I hosted.  Grilled burgers and veggies on the pit, various salads from the relatives, various chips, fresh salsa I made at the cabin,  roasted corn on the cob, watermelon from the garden.  S'mores!  Just got home, I smell like campfire.

Prawns, cooked on the grill with garlic, ginger, fresh chili, lime juice, chopped coriander and kecap manis (sweet soy sauce). Together with rice and green beans (not sure what you call them in the US?).

As I had a slice of Atlantic Salmon with chips (fries) and salad for lunch, tonight will be a couple of pastrami and cheese rolls and soup.  And a couple of glasses of Banrock Station White Shiraz. 8)
