Really easy slow cooker turkey 3-bean chili.
Brown 1 to 1 1/2 pounds grown turkey with one chopped medium onion and one chopped green bell pepper.
Drain off fat and place in slow cooker (crock pot). To this add:
28 oz can diced tomato, undrained
15 oz can tomato sauce
15 oz can garbanzo beans (chickpeas), drained and rinsed
15 oz can small red beans, drained and rinsed
15 oz can black beans, drained and rinsed
15 oz can sweet kernel corn, drained and rinsed
4 oz can diced green Anaheim chilis, undrained
2 tablespoons chili powder
1/2 teaspoon ground cayenne pepper
12 oz bottle of lager beer
Stir and cover. Cook on low setting for 4 to 6 hours. Prep time 10 minutes.
Serve with diced sweet or sliced green onion, or shredded cheese.
Accompany with honey corn bread and a green salad.
You can, of course, substitute fresh vegetables and/or dried beans (soaked overnight) for the canned goods, but it would not be "really easy." If using fresh vegetables, add salt to taste.
