Hi Beth,
The problem is that without the melted cheese curd it would no longer be a Poutine, would it? . It is also because of this unique mixture of French fries, smoked meat, gravy and melted cheese curds that it is so revolting. Adding lobster to such a mess would in my mind be almost criminal. Just give me the lobster and i'm happy to leave the rest of it to anyone else...

That being said, in the middle of the bitterly cold Québec winter, I can just about see how such a dish might make sense. It was over 30°C on a July evening when I tried it!

I'm not sure you're using the word "delicacies" correctly.

French Canadian cuisine is not easy to relate to, but then a lot of things Canadian seem to mystify non Canadians.

Our butter tarts for instance, ahh the wonder of all that sugar, and we also have sugar pies. And recently Lays made for us Maple Moose flavoured potato chips, yes, the taste of maple flavoured moose meat on a potato chip. Me I like to sip maple syrup right out of the bottle.

It isn't likely easy being a diabetic in Canada.

We also have Ketchup flavor chips. Mmmmmm.  And All dressed chips.  And Coffee Crisp (coffee flavored chocolate bar)
