I have the unfair advantage of being trained to play "Souls" games, I've been with them since Demons Souls so I know juuuust how they work xD
I avoided, and am still avoiding, all media coverage on the game, and I am soooo glad I have! There are some truly amazing twists and surprises that I never saw coming! Talking to people afterwards who have said they had it ruined for them because of spoilers on FAQ sites etc ^^
So I would really recommend keeping yourself in the dark, best experience

I am a huge fan of PvP as well and recently I have been having a great time in the bell tower.

I've been playing two builds, the one I play for livestreaming is an old "Sword and Board" style character, so heavy armour, high poise and equip load, good shield and a bastard sword one handed. It's always been my old trusty playstyle that I adventure in, starting a new game as a spell caster can be hard, as they often mess around with the way magic/pyromancy scales etc and you are useless unless you know where to get more new and better spells etc quickly.
Having said that, my second character (the one I play on my downtime for fun when I can't be bothered streaming) is a spellsword!

I agree with you that the soul arrow spells etc can become quite lackluster, especially when compared to older games, but once you get better spells and a weapon with the right scaling, it really picks up!
Magic/fire elemental weapons scale with your fire bonus etc now (which you increase via int and attunement) so getting a fire or lightning sword early (you can get the amazing fire longsword before the first boss!), rushing to get the 10 strength and 9dex to use it and then just going back to levelling your int/att and buying magics + upgrades is AMAZING!
My little sorceress is easily hitting for 50% more damage per swing than my strength build knight was at the same level, just due to the fire scaling on her sword and the magic weapon spell. Then I also have all the additional utility of the ranged spells she can throw out. She is just slaughtering her way through the game, I haven't even summoned any co-op partners with her! It's so much fun to play and completely different from any other build I usually play.
