That sounds really yummy!
I use Potatoes O'Brien, which consists of cubed potatoes, onions, and sweet peppers. I cook it in a skillet. While it is cooking, I whisk three eggs and add them just when the potatoes are almost done. Adding some cubed ham would be good too. Then, I continue cooking like scrambled eggs until the eggs are no longer wet or sticky.
Dump it on a plate and sprinkle with some Mexican-style 4-cheese shredded cheese. Then top it off with chunky salsa, and/or sour cream. I call it Potatoes O'Lori. I make it a couple of times a month. It is so good.
