One theory of the origins of French fries is that these were created by poor people in the 1680s.  They cooked potatoes instead of fish.

Another theory why they are called French fries is the American solders during WW I enjoyed them a lot. They were in the French speaking portion of Belgium.

Often fries are made with potatoes that are oval.  These potatoes can produce longer fries.
Russet potatoes are often used to produce fries.

Good fries can be rather tasty. 

I wonder if they taste much different if cooked in beef tallow vs. some seed type oil.

I honestly can't stand fries. French or otherwise. It must be the Brit in me. Double cooked chips, cooked in beef dripping, over fries any day. I tried one once when one of my friends got some from McDonalds. Couldn't even eat the whole thing.

McDonald's used to have the best fries. Just the smell of them made me hungry. Then they switched their cooking oil and they have never been the same. They upset my stomach so I just quit going to McD's.
