Now that they have 2 light versions, which one do you think would be most realistic for a pale white person?

I'd go with beige, just because even super-white caucasians usually have genitalia darker than the rest of their bodies. I'm a slut and I've slept with tons of white guys, and I only very rarely see the kind of pink that the light beige is.

But that's just me. I bet whichever you use will work. Most people don't think to question skin variations.
