Chocolate cream is my favorite. But I have a friend who makes an awesome lemon meringue. The lemon part is tremendously tart while the meringue is extremely sweet. The combination in every bite is fantastic.

Almond Crust Cherry Cream Pie

Ingredients

1 Pastry for 9-inch pie
1/2 cup Almonds - finely chopped

1 can Sweetened condensed milk
1/3 cup Lemon juice
1 teaspoon Vanilla extract
1/2 teaspoon Almond extract
1/2 cup Whipping cream; whipped - (or 1 c. Cool Whip)

Glaze

1 can Pitted sour cherries - drained, 16-oz can
2/3 cup Cherry juice
1/4 cup Sugar
1 tablespoon Cornstarch
2 drops red food - coloring (2 to 3)

Directions

To your favorite pie shell recipe add 1/2 cup finely chopped almonds. Bake and cool.

Mix condensed milk, lemon juice, vanilla and almond extract. Stir until mixture thickens.

Fold in whipped cream and spoon into cooled, baked pie shell. Top with Cherry Glaze.

Cherry Glaze: Set aside drained cherries. Blend cherry juice with sugar and cornstarch. Cook over low heat, stirring constantly, until mixture is thickened and clear.

Add cherries and food coloring; spread over cream filling.

Chill.

The day I found my American Brother in law toasting marshmallows on peanut paste toast convinced me that you guys have reached the end of evolution and are to replaced by ..... Australians of course.

It is true the rubes are found most everywhere.
I am, however, cultured.
I get it from my French yoghurt.  :D


Kraft Peanut Butter S'mores


What You Need
3 Tbsp. PLANTERS Creamy Peanut Butter
9 HONEY MAID Honey Grahams, broken crosswise in half (18 squares)
7 OREO Cookies, coarsely chopped (about 2/3 cup)
3 Tbsp. hot fudge ice cream topping
1/2 cup JET-PUFFED Miniature Marshmallows

Make It
SPREAD 1 tsp. of the peanut butter onto each of 9 of the graham squares. Top each with about 1 Tbsp. of the chopped cookies, 1 tsp. of the fudge sauce and 3 or 4 marshmallows.

COVER each with second graham square to make s'more. Place 4 or 5 of the s'mores on microwavable plate.

MICROWAVE on HIGH 10 to 15 seconds or until marshmallows begin to melt. Repeat with the remaining s'mores. Serve warm.

Well my mom never had access to a lot of herbs and the kinds of ingredients we get now. Or the internet. But she did sweets much better than I do. I don't bake anything. I used to bake quick breads (i.e. banana bread) but the high altitude has me so confused I don't bother anymore.


Pies-- Key Lime. It has to be in Key West though.
