This evening I made a spicy hot meat loaf.

The main ingredients were 1 pound of lean ground beef and one-half pound of of Mexican pork chorizo

Mixed together with 1/2 cup bread crumbs, two beaten eggs, 1/2 sweet onion - chopped or diced.

Sometimes, I'll put some shredded cheddar or colby cheese in the middle of the loaf, but not tonight.

After baking in a loaf pan at 350 degrees F, for 50 minutes, I poured off the excess fat and topped it with a mixture of ketchup (or is it catsup?), prepared mustard, honey, and tabasco sauce.  Then baked for 10 more minutes.

Very easy, very inexpensive.

Yum, spicy meat loaf! The concensus is ketchup. Hard boiled eggs in the middle makes that "Meatloaf Surprise." Not peeling the eggs makes it an unpleasant surprise! Hugs, Devlyn
