This evening I made a spicy hot meat loaf.
The main ingredients were 1 pound of lean ground beef and one-half pound of of Mexican pork chorizo
Mixed together with 1/2 cup bread crumbs, two beaten eggs, 1/2 sweet onion - chopped or diced.
Sometimes, I'll put some shredded cheddar or colby cheese in the middle of the loaf, but not tonight.
After baking in a loaf pan at 350 degrees F, for 50 minutes, I poured off the excess fat and topped it with a mixture of ketchup (or is it catsup?), prepared mustard, honey, and tabasco sauce. Then baked for 10 more minutes.
Very easy, very inexpensive.
