I sort them so I can eat all of one flavor before moving on to the next...greens first, yellows, orange, white, pink, purple, red...and then OMG....

Today, for my cardiac rehab group, I made 15 tasting servings of a "heart healthy" salad.

The salad was comprised of mixed greens (butter lettuce, escarole, frisee endive, baby spinach, radicchio, and carrot), sliced avocado (in lime juice), sliced tangelo segments, fresh sliced strawberries, and thinly sliced red onion.  I dressed it with a homemade vinaigrette made from extra virgin olive oil, fresh squeezed lemon juice, orange honey, and lemon zest.

I made a take on Chicken Florentine.

Started off by slicing two skinless, boneless chicken breasts, through the middle, horizontally.  I applied some garlic salt and freshly ground black pepper.  I melted a couple of pats of unsalted butter in a cast iron skillet, and browned the breasts on both sides, on medium-high heat.  Then I put the breast in a small casserole, and popped it into an over at 250F, just to stay nice and warm.

In the cast iron skillet I added two more pats of unsalted butter, and sauteed 2 tablespoons of minced shallots (about half of a shallot) and then added two mince garlic cloves.  After the garlic has become aromatic (about 45 second), I deglazed with a cup and a half of white wine (Clos du Bois, Pinot Grigio, 2010), scrapping the bottom of the pan to loosen the fond.

Let the wine reduce for a few minutes, then add a cup of cream or half & half, and reduce by half.  Your sauce should not be runny, and should coat the back of a spoon.

As the sauce is reducing, heat another pan and melt 2 pats of unsalted butter.  Medium-high heat will do.  Saute another minced garlic clove for about 45 seconds, they add and quickly stir-fry about 6 ounces of fresh baby spinach (you can leave the stems on, if you wish).  About one minute.  Then take it off the heat.

Plate you two chicken breast halves and spoon some of the sauce over the top.  On that place about half of the spinach.  Repeat of the other plate.  Serves two.

Not really too hard.

Don't even bother.  Some girls have all the luck.  Jaime eats pizza and Mounds bars and looks like a cover girl, and I eat salad with no dressing and look like ... Mama Cass Elliot

My middle daughter has Crohn's.  So, this weekend is the Crohn's and Ulcerative Colitis charity walk in Santa Barbara.  Last night we hosted many of our team's walkers to a barbecue.  One was in from out of state, and another had driven down from the Bay Area.

We feted them in true southern California style, with a Santa Maria style barbecue.  Appetizers were a warm queso dip and tortilla chips, and a couple types of grilled sausages (chicken an d apple, and andouille).  We had grilled beef tri tip (which is a bottom sirloin roast), grilled chicken, homemade salsa cruda, pasta with tomato and feta cheese salad, western baked beans, garlic french bread, and fresh corn-on-the-cob.

We were making margaritas prior to dinner, then with the meal we served a nice California Shiraz.

Now, today, I get to walk that off!  (Fortunately, since I was cooking, I was not really eating.)

Sounds good, even though I don't have colitis I'd most surly have one or more of the symptoms after eating all that spicy stuff. Love those andouille sausages though, gave a whole case of them to my eldest son as an odd birthday gift, he's the Grillmaster and Mr. Yard party personified.
