Spent the day at the beach.  Cold and overcast!  >:(

I could have walked around buck naked all day and not gotten a burn.

So anyway, since I had a bad weekend, I thought I would try to make amends by throwing together a nice seafood dinner.  Went over to one of my favorite fish markets - avoided the temptation to buy some oysters on the halfshell all for myself.

I picked up some Pacific Red Snapper filets, King Crab legs (cooked), and some Bay Shrimp.  With the shrimp and crab, I added lemon juice, chopped celery, and sweet onion (hmmm, pickled might have been nice), to make an easy seafood cocktail.  I took some mixed greens and tossed them in a homemade Louie dressing, and topped the salad with the seafood cocktail.  Refrigerate.  Part one finished.

Part two, instant mashed potatoes with some minced garlic.  Keep it warm on the stove.  Easy breezy.

Part three (happening simultaneously as Part two), quickly pan fry in just a bit of olive oil the snapper filets, which had been doused in lemon juice and herbs and a bit of garlic powder.  Four minutes on a side over medium high heat.

Plate the meal and enjoy.  I did.  Not bad considering I had one foot in the grave yesterday.

I really do try to adapt recipes to be more heart healthy.  Fish is a great food, if you avoid breading and deep-frying it.  That just adds carbs and calories.

The four snapper filets I cooked added up to just over 5 ounces each - a very modest serving size and easy on the beltline, especially if you avoid the tartar sauce!

And no butter in or on the potatoes.  Little improvements build up over time.

Something along the lines of coq au vin, only done in my pressure cooker because I'm impatient.  Also, I stuffed that poor bird full of cubed ginger, so perhaps un coq au vin tres supris et sous pression?  Bwak!   ;D
