I did seafood tonight too.
I marinated a couple of swordfish steaks in orange juice, pineapple juice, olive oil, and cayenne.
Then I made a salsa from tomato, onion, red bell pepper, jalapeno, pineapple, lime, lime juice, and a bit of sea salt.
Whipped a quick cocktail sauce from ketchup, horseradish, and chipotle Tabasco sauce
I sauteed some fresh Pacific Oysters a little olive oil, tequila, orange zest, and lime juice, with some spices - I call it margarita oysters.
Broiled the swordfish 5 minutes to a side, basting when turned.
Plated the swordfish and topped with salsa. Served with the oysters, cocktail sauce, and a herbed rice pilaf. Sauvignon blanc.
