Caribbean recipes

Who's tried?

I'm willing to share mine.

What would you like to cook? Have you ever had Caribbean Cuisine? Particularly from Trinidad and Tobago, Jamaica, Guyana, Barbados and Grenada.

We made these Pasteles over Christmas:

My aunt used to make them, and it was a Christmas family tradition to have them at lunch over at her house (I hope I can have lunch at her house for Christmas one day again).

We're trying to make doubles next, my mom used to make them sometimes and I've bought many from the "doubles man" in various places, be sure to have it with hot pepper (if you can).

I like a nice Cuban sandwich or jerk chicken myself.

Jerk is good. I have that now and again. We used to cook it in the oven but we use the gas grill now. I want to try it with charcoal.

Brown stew is a staple here. When I showed my wife how to make it, it quickly became a favorite.

Of course, she's a vegetarian now so she doesn't enjoy my awesome brown stew anymore... oh well, more for me. :)

When I lived in Trini, brown stew and a dhalpuri roti was nice. You would buy it from a roti shop all wrapped together nicely. They would also offer brown stew beef which was pretty awesome. I've done that on more than one occasion. But to get the true taste you need the proper cane sugar. I have found that some of the sugar in the grocery stores here doesn't compare. So I go down to Richmond Hill in Queens and get my ingredients for authentic taste.

As for the Caribbean curry - what kind of curry powder do you use? I use Kala brand and Chief (both made by Chief Brand products), but my wife is a fan of Lalah's. Lalah's tends to be a bit more refined and has a slightly different taste. I've actually been to the Chief factory... you can smell the raw curry across the highway!

I made brown stew with a veggie chicken substitute.Levi Roots Jamaican sauces can be bought for £1 or less in UK discount stores.

Usually you buy it pre-blended.

Also "curry" is a British invented word and covers a wide variety of the spice. Some of the Indian curries have chili and tomato blended in.

I have loads of food sensitivities and don't do too well with certain spices -- so I tend to blend stuff myself [emoji16]
Have to make virtually everything from scratch....

Smoky jerk sauce with veggie chicken ,red pepper, chickpeas and long grain rice.Forgotten how much I enjoyed it and it doesn't blow your head off(or the other end tomorrow!)

Jerk chicken sounds good right now. I don't have it right now, but I could post my recipe pastelikos or bourekas, which isn't really carribean, but is similar to pastelles.

Not at all. It's made with beef, chicken or pork. You might be able to substitute a vegetarian option if you're vegetarian/vegan.

I used to buy these Tamale's at the store that looked just like those! They were wrapped in a corn husk. They were my favorite. :3

And thank you! I'm definitely going to try it! :3 Looks like I could have a lot of fun with the insides. Filling it up and what not. All different kinds of things~! Oooh! I'm so happy I saw this!
