This is the best pork ever. It comes from pigs raised for their heart valves, which are used in humans, so they lead pretty nice lives -- very clean, very well fed and cared for. The meat is incredibly flavorful, and it isn't very expensive, as it's sort of "left over" after the hearts (and some other tissues used for things like wound closure).
