Sooooooo, I take it that Roll and Laurie are fellow Chili Heads, to at least some degree? Might have to make you two some of my 5 bean chili. It has four heat levels, all of which are made in a single (large) crock pot over 12 hrs. I usually Use about 4 lbs of meat, mostly ground beef, hot italian sausage, and ground buffalo (when available.) I always use at least 3 oz of chili powder while browning the meat, and the rest in the sauce. The first 3 levels of heat I add Fire Roasted Tomatoes, None in the Highest.
Lists of respective peppers used to make pepper mash for the base by ascending level of Heat:
Green aka Mild (Still hot to non Chili Heads,) - 1 lb of Jalapenos, .25 lbs of Cayenne Peppers, .25 lbs of Serranos, 2 Cans of Diced Green Chilies, 3 Habaneros, 1 Poblano, and 1 Hungarian Wax Pepper- 12 oz total of Chili Powder Used
Red aka Hot - .5 lbs of Jalapenos, .5 lbs of Cayenne Peppers, 1 lb of Serranos, 1 Can of Diced Green Chilies, .25 lb of Habaneros, 1 Poblano, 1 Hungarian Wax Pepper, .25 lb of Roasted Chipotle Peppers and .25 lb of Fatali chilies - 1 lb (16 oz) total Chili Powder Used
Neon (Inedible to most non Chili Heads) - 5 (individual) Jalapenos, .25 lb of Cayenne Peppers, .5 lb of Serranos, 1 lb of Habaneros, .5 lb of Roasted Chipotle Peppers, .5 lb of Fatalii Chilies, .25 lb of Naga Vipers 3 Dried Bhut Jolokia (Ghost Chilies,) and 1 - 6oz bottle of Habanero and Ghost Chili Extract - 1 3 oz lb total of Chili Powder Used
Glow In The Dark (I warn people they shouldn't touch it if they have digestive or heart problems, shouldn't sniff it while steaming hot with sinus issues, and use protective eye wear, respirator, and gloves while making mash) - 1.5 lbs of Habaneros, 3 Roasted Chipotle Peppers, 1 lb of Fatalii Chilies, .5 lb Naga Vipers, .25 lbs of Dried Ghost Chilies, 3 Carolina Reapers, and 1 - 12oz bottle of Carolina Reaper and Ghost Chili Extract - 1 lb 6 oz total Chili Powder
I've never had someone not love the flavors, only whether or not it was too hot for them. Wife and I are debating trying to commercialize it, especially the last two, with medical warnings on the labels. If the last two sound like your kind of thing, we should definitely share more recipes. Next time I make a batch of one of the top two, I'll share pics. I don't make those two often due to ingredient costs. The Glow In The Dark costs over $50 to make a single (large) crock pot worth.
