Ribeye is my first choice when it comes to steak. I'm having my second choice, country fried steak.

Tonight I am sort of focused on the whole grain waffles I am making for my cardio rehab group tomorrow morning.  Getting it all prepared ahead of time.

So tonight for dinner I made something really easy, just from what is on hand.

I thawed out some boneless, skinless chicken breast I get a Costco, vacuum wrapped.

It took the halved breasts and seasoned them with Mrs Dash Original, garlic powder, and FGBP and browned them in a skillet, a few minutes on each side.  I then transferred them to a casserole and popped them into a 350F over for about 20 minutes.

At that point I placed a slice of Swiss cheese on each breast piece, and topped it with some sliced ham lunchmeat.  Back in the oven for 5 minutes to melt the cheese and slightly brown the ham.

On to the plate with a squeeze of honey mustard.  Served with some saffron risotto, and peas & carrots.

The risotto cooked while the chicken was in the oven, and the peas & carrots were from a frozen package, and cooked in the microwave for 8 minutes.  Total time - not more than 35 minutes, and only a few minutes active time.

I had a Tofurky (soy) Italian sausage sauteed with some green peppers and onions. A side of rice and some garlic hummus with corn chips.

Tonight in my camp we served for dinner

Roast beef...roasted spiced chicken...deep fried than grill fried
Perogies...garlic sausage and onion fried grill top...
Rice...mashed potatoes...gravy...and finally brussel sprouts...

And a tossed garden salad...and a broccoli salad....

Lemon cake with icing for desert .

Steak chat broiled over open flame
Teriyaki and hot wings. .
Mushrooms and onion fried in butter and garlic
Prawns fried in butter and garlic
Rice and baked Potaroe with sour cream and bacon bits
Onion rings and French fries
Gravy
Greenpeas...
Ceasar salad. 
And pies for desert. ...

I made fried chicken tenders, then poured off the fat and made a chicken gravy in the pan for dipping. I love me!
