Tonight I am sort of focused on the whole grain waffles I am making for my cardio rehab group tomorrow morning. Getting it all prepared ahead of time.
So tonight for dinner I made something really easy, just from what is on hand.
I thawed out some boneless, skinless chicken breast I get a Costco, vacuum wrapped.
It took the halved breasts and seasoned them with Mrs Dash Original, garlic powder, and FGBP and browned them in a skillet, a few minutes on each side. I then transferred them to a casserole and popped them into a 350F over for about 20 minutes.
At that point I placed a slice of Swiss cheese on each breast piece, and topped it with some sliced ham lunchmeat. Back in the oven for 5 minutes to melt the cheese and slightly brown the ham.
On to the plate with a squeeze of honey mustard. Served with some saffron risotto, and peas & carrots.
The risotto cooked while the chicken was in the oven, and the peas & carrots were from a frozen package, and cooked in the microwave for 8 minutes. Total time - not more than 35 minutes, and only a few minutes active time.
