My AlliKat made the yummest healthy Italian dish I have ever tasted the other night! She is becoming quite the cook and I am loving having her cook more! This one she picked out cause it was pretty low in potassium for her as well as being Weight Watchers friendly for me! And it was soooo good! It came from weightwatchers.com so I can't link the source cause you have to have a login to their website for the page to come up...

Baked Ziti with Turkey Sausage

Minutes to Prepare: 12
Minutes to Cook: 35
Number of Servings: 8

Ingredients

1 pound raw turkey sausage, casings removed (Italian style sweet or spicy)
1 medium onion(s), chopped
1 medium green pepper(s), chopped
28 oz canned diced tomatoes
10 oz frozen green peas, thawed   
2 Tbsp canned tomato paste
1 tsp dried oregano
1 tsp dried basil
1/2 tsp dried thyme
1/2 tsp fennel seed
1 Tbsp garlic powder
1 tsp salt
1/2 tsp black pepper, freshly ground
12 oz uncooked pasta, ziti, cooked according to package directions
6 oz shredded part-skim mozzarella cheese   

Directions

Position the rack in the center of the oven and preheat the oven to 350°F.

Crumble the sausage meat into a large saucepan and brown over medium heat, stirring often, about 4 minutes.

Drain off any fat, then add the onion and bell pepper. Cook, stirring often, until softened, about 3 minutes.

Stir in the tomatoes, peas, tomato paste, oregano, basil, thyme, fennel seeds, salt and pepper. Bring to a simmer, then reduce the heat and cook uncovered 5 minutes, stirring often.

Stir in the cooked pasta and half the cheese. Spread evenly into a 9- X 13-inch baking pan. Top evenly with the remaining cheese.

Bake until the cheese has melted and the casserole is bubbling, about 20 minutes Let stand 10 minutes at room temperature before serving

Thanks, Simon! I should have elaborated. The fish was seasoned with garlic powder, onion powder, black pepper, seasoned salt and put in a ziploc  bag with two tablespoons of water. The fish soaked up the brine and sat for fifteen minutes,  then I put a half cup of flour in the bag and shake until the fish is evenly coated and dry. Fry in 1/4 inch of vegetable shortening (Crisco) four minutes to a side over medium to high heat, you have to manage the heat as you go. The sprouts were just steamed.

Chicken panini! I got a panini press from my dad for my birthday. The Sunbeam Panini Press/Grill. I highly recommend it. It comes with drip cups to catch the fat that slides out of this tube on the side and this neat fork, like thing that fits perfectly between the grill lines so you can scrape off some stuck stuck. Use some cooking spray with it for a perfect non-stick cooking. Plus, it cooks both sides at the same time, so I can cook burgers much faster.  :P

It works so well, and I love it!  ;D

Well, I wrote a basic procedure, but I'm too lazy to type a whole recipe (get enough typing doing my homework  :P).

Basically, for the meat, get beef cubes, and then blend 2 cloves of garlic with 1/2 of a large red bell pepper, 1/2 of a large onion, and optional 3/4 cup of tomato sauce. Place this mixture in your beef and boil it with salt and black pepper to your liking.

Follow the rest of my procedure (carrots, peas, and eggs to your liking) and then either fry or bake the filled empanadas.  :)

Gee, I didn't realize how much spanish I knew until I read this thread :).

So I didn't know what I was making tonight until I was finished making it.  I usually call these types of meals concoctions, but this one Imma call italian rice because it's essentially spanish rice but with italian ingredients, well sorta.  Was yum.
