I'm having 1 cup of baked organic boneless skinless chicken breast, 1/2 cup of sweet potatoes, 1/2 cup of carrots seasoned with a tiny bit of pepper. Also, 1/4 cup of spinach. 326 calories.

Went out to a local BBQ place tonight. Had hot wings, fries, and a salad.  ;D

Tried out something for the Superbowl:

Preheat your oven to 350F.

Dice one large ripe tomato and 1/2 large onion, and saute in a little oil, on medium-high heat, in a 2 qt sauce pan, until the onions are translucent and the tomatoes have begun to brown, about 5 minutes

Add one can of your favorite canned chili (15 ounce), beanless, and 6 ounces of beer (drink the rest while cooking).  Continue to cook on a low roiling boil, for ten minutes, stirring occasionally, scraping the bottom of the pan as you do.

In the meantime, cover a large roasting pan in foil and spray with some Pam.  Spread a 11 ounce bag of Fritos Scoops  out on the foil and sprinkle liberally with shredded cheese (I used a four cheese mexican blend, about 8-12 ounces).

Put in the warm oven and allow the cheese to melt.  When ready to serve, place some chips and cheese on a plate, and top with warm chili.  Sprinkle a little more cheese on top of the chili.  Have plenty of napkins available.  Finger-lickin' good.

I was feeling very lazy tonight, due to being knackered from doing housework, so I had a big wedge of one of my favourite cheeses, along with some poppy & sesame seed biscuits and some wine.

I'm feeling hungry again though, so may have a mini pizza, or some veggie bacon on a roll. I wish I had tortilla chips, then I'd make nachos. Mmmmmm, nachos.
