Made from scratch "Lazy Lasagna". Added 1 lbs of hamburger, now it serves 4 instead of just two:

Oh, and a can of spinach.

Me too! I like it cold straight out of the can and topped with ranch dressing.

Sounds gross but it's good.

I love spinach too. I have a great recipe for pan-wilted fresh spinach, topped with sautéed chestnut mushrooms & dried cranberries in a creamy dressing (sounds weird, but it's a delicious and fancy-looking starter).

Tonight's dinner is my lovely homemade chestnut mushroom risotto. Chestnut mushrooms are my favourite mushroom, they have a great earthy/woody/nutty flavour.

Campanella with meat sauce. Yes, I always make it in a frying pan. Yes, I'm going to eat it right out of the pan.

I made stir fry with chicken, shrimp, and a side of saffron rice.

I'd take a picture but it's in muh bell-ay.

Sounds like I'm in the same boat as Simon...more or less out of food.

But I found a sweet potato in the pantry. Guess I'll nuke it and call it a meal :)

I made Classic Avocado Soup from my latest cookbook, Pati Jinich's Pati's Mexican Table which I highly recommend. This is the second recipe I've made from it so far, and each recipe has been crystal clear, provides a list of alternate ingredients, is easy to make, and is quick. (I also made a recipe that's provided on her website which was just as well written).

Yummy, can't wait to make more stuff from it this weekend.
