I still had some green Thai veggie curry left over so I stir fried some King Prawns and put the curry in with them and had it with long grain rice.

Tonight I made Thai Peanut Chicken.  I adapted this recipe, but made a few changes.

http://www.food.com/recipe/thai-peanut-chicken-446148

One change was the use of boneless skinless chicken breasts, cubed

Left out the cayenne, but added a little lemon grass.

I did not flour the chicken, but stirfried it with the ginger and garlic.

And added bamboo shoots to the sauce.

Served with jasmine rice and an Asian green salad.

Uh - Having posted a myriad of exotic dishes it's my opinion that you should be proprietor of an upscale restaurant and quit wasting your time here Jamie D. You have the magic touch and palate for fine cuisine my friend!
