My shoulder surgery was delayed due to lack of sodium, trying to decide what's for dinner... Chicken sounds good  :)

Not technically dinner, being as it's 2.30am, but I just finished a mini pepperoni pizza and It was decidedly yummy.

Pepperoni sounds good to me, but not in my oatmeal for breadfast.  I prefer dried fruits, like raisins, dates, apricots, and apples.

I went on an experimental cooking rampage this morning. I decided to try making spinach squares without a recipe. Thawed and drained some frozen spinach (pain in the ass. will use fresh next time). Mixed it with ricotta cheese, couple eggs, onion powder, lemon pepper, celery salt, and pepper. Smushed it into a buttered pyrex dish and baked it.

Then I tried some lowish carb shepard's pie. Cooked some cauliflower and put it in the food processor with some greek yogurt, sauteed onions, other seasonings. Mixed that with a baked potato and some peas to make the base. Then seared some beef and cut it up and put it on top along with some more sauteed onions (everything sauteed in red palm oil). It all turned out okay but pretty a little bland for my taste. I'll go heavier on the seasonings next time. Also meant to put some Parmesan in both and forgot.

Made enough food that I'll be having leftovers for a few days.

Fred Meyer had a closeout sale on the big bags of white (navy) beans, so I've been having those with brown basmati rice. I got bored with it and so the last bowl I added a ton of curry and red pepper and california olive oil and used it for dip with some awesome and cheap whole grain "party" bread from the day-old racks.

I'm making onion soup. The trick of course is burning the onions without burning the onions.

I made a Tandoori marinade earlier in the day (while I could not access the site  >:() and put in 5 chicken thighs for several hours.  Then, while the site was still down, I made some saffron rice with dried chopped dates.

After checking to see if the site was yet available, I broiled the chicken on each side until crispy, then moved to the lower rack and baked at 450F until the internal temperature of the thighs reached 170F.

In the marinade I used a honey youghurt, garam masala, cardomom, cumin, tumeric, garlic, ginger, onion, lemon juice, FGBP.  No added salt or MSG.

I did not have any Indian naan bread, so I used pitas instead.

Like Jamie, I had Indian for dinner, just assorted leftovers from langar on Friday. It was more flavorful since the juices got to soak into the rice.

Headed to the only dining hall on campus in this area that's open after 8. Means I'm probably eating pizza. Delicious, but that's probably why I feel so heavy :(
