Just a bit of story first... When I lived in various beach towns on the west coast I loved to get fish and chips off the local fishing wharf, it's one of the things I've missed most since moving inland
Well, I don't really trust the local grocery here on their idea of fresh fish so I get these little $1.25 packets from ocean eclipse seafood of Alaskan Pollock, Rockfish, Cod or Salmon which work out great for a single serving
There is also another brand called Nautilus that offers a nice 2LB bag of Alaskan Pollock fillets that I actually like better
Just run it under a slow stream of cold water to defrost while mixing up some breading and you're ready to roll
