I'm doing the traditional New England brown bread in a coffee can, but I make it in a steel bowl instead of a can.

I sure do. It's in the steamer now and comes out at 4:00 but honestly it's better tomorrow when I butter the slices and give it a quick fry. Sometimes I substitute orange or lemon extract for the vanilla.

I decided on "breakfast for dinner" and made french toast with hard rolls and a splash of chai tea late in the mix. 
I don't know what I'm doing.

Haddock is the usual choice, but I prefer cod. What do you like to use?

Just a bit of story first... When I lived in various beach towns on the west coast I loved to get fish and chips off the local fishing wharf, it's one of the things I've missed most since moving inland

Well, I don't really trust the local grocery here on their idea of fresh fish so I get these little $1.25 packets from ocean eclipse seafood of Alaskan Pollock, Rockfish, Cod or Salmon which work out great for a single serving

There is also another brand called Nautilus that offers a nice 2LB bag of Alaskan Pollock fillets that I actually like better

Just run it under a slow stream of cold water to defrost while mixing up some breading and you're ready to roll

We just had "midday dinner" -- pan-fried trout, mushrooms, and wild rice with turnip greens.
Never bring an umbrella to a coyote fight.

Alaskan Pollock

We get fresh North Atlantic fish here. I season my fish with salt, pepper, and a tiny bit of both garlic and onion powder, then I put it in a Ziploc bag with a couple tablespoons of water, mix it up and let the fish soak up the water. Then I put about a cup of flour in the bag and shake it up. I pan fry it four minutes to a side in Crisco. 

PRO TIP: Frying in oil will leave your house smelling fishy for a week. Frying in Crisco (vegetable shortening) will leave your house smelling like fish and chips for a couple hours, then go away.
