For me I'm cheating tonight, heading out for a birthday meal, Thai in a yuppy land suburb... been twice before...

As much as I love making Thai dishes, they are never as yummy as those done for you  :P

It'll be chicken cutlets but I have no clue what to do with it. Maybe some form of fried chicken. Think I'll email Sweetie and see if she has any ideas or preferences. Her tummy has been a bit off.

Tonight it's a Memorial Day BBQ for the ages.

Gourmet cheeseburgers, everything made from scratch.

We made our own buns, ground our own beef (1/2 Sirloin / 1/2 Chuck) and made guacamole with bacon in it.

I'm going to make one "animal style" (like In-N-Out) and another Santa Barbarian style with jack cheese and bacon guacamole.

I had Tilapia and a salad.

They were frozen, so I heated the skillet good and hot first, put them in there and threw a few pats of butter around them.  Then I added about 1/2 cup water and a tablespoon of olive oil.  Next I dashed lemon juice on them and seasoned with Italian herbs, garlic powder, sea salt and some pepper.

Cook on medium for 8 mins covered, then uncover, flip them and go another 5 mins without the cover.

De-Lish!
Some people say I'm apathetic, but I don't care.

Total cheat night!  Ball park food.  I haven't decided yet, but the nacho supreme is always good and I get some veggies in there.

I'll be topping four pizzas. (A local store provides some nice bases)
1) spinach, chilli mushroom and feta
2) mushroom and pineapple on a BBQ base
3) chilli and some sour cream added after it comes out
4) swiss, feta, romano, and cheddar cheese with a cheese sauce base

Followed by a raspberry and apple crumble made from scratch served with vanilla ice cream. With a hot chocolate during the meal
