I had my usual big salad, and then tinkered a bit for my main course together the right amounts of carbs, fats, and protein for my daily total (meds and assorted effects have me following a diet to reduce kidney load for a while).
So, I sautéed some chopped peppers and onions, added pesto, and tossed udon noodles (!) with this, an odd variation on a fettuccine dish, but very good.

50 g chopped red peppers
50 g diced onions
2 tbsp pesto
56 g udon noodles, boiled and drained.
Add noodles to boiling water, to cook 4 minutes
Sautée the peppers and onions in a nonstick pan 3 minutes. Season with garlic and pepper
Reduce heat, add pesto.
Drain the noodles, and toss with the pesto and veggies
Serve and enjoy.
