Greek chicken and potatoes, tzatziki and pitas. Randi made the potatoes. I did the rest. Homemade tzatziki is a staple for us but this is the first time I've made pitas from scratch.

I had my usual big salad, and then tinkered a bit for my main course together the right amounts of carbs, fats, and protein for my daily total (meds and assorted effects have me following a diet to reduce kidney load for a while).

So, I sautéed some chopped peppers and onions, added pesto, and tossed udon noodles (!) with this, an odd variation on a fettuccine dish, but very good.



50 g chopped red peppers
50 g diced onions
2 tbsp pesto
56 g udon noodles, boiled and drained.

Add noodles to boiling water, to cook 4 minutes
Sautée the peppers and onions in a nonstick pan 3 minutes.  Season with garlic and pepper
Reduce heat, add pesto.
Drain the noodles, and toss with the pesto and veggies
Serve and enjoy.

Good afternoon,

Usually pizza hand made by me. In it I avoid using much ham, but I do use boiled eggs. People say it looks more like a pie, because of the amount of vegetables I put on top of it, champignon, frozen pea, tomato, onion...the mystery is, how I still keep being skinny :o

 Tonight I grilled a NY steak and had a baked potato with it along with my first attempt at fried corn thanks to julia It's all her fault. I added a but of fine diced green and red bell pepper. I liked it but my sister said it was too sweet for her.

Had roast chicken,  mixed veg,  roast potatoes,  stuffing,  gravy.  Followed with homemade jam and sponge pudding with custard. It could only get better if you put it all on top of a pizza [emoji23]

 Since my sister didn't cook I settled for a sandwich minus the bread using Romaine lettuce,
Miracle whip, pastrami, spicy brown mustard, campfire chicken, provolone cheese, olive pimento loaf, bell pepper, onion, jalapenos salt and pepper. I even managed to get it rolled so I could hold it while eating it.

Tonight I'm making tuna noodle casserole.  It's not something I would usually make but my dad really likes it and requested it. I make a white sauce for it so it's not as icky. I love mushrooms but I think that condensed cream of anything soup is nasty and would never cook with them. I also use white albacor tuna and that makes it a little less nasty too.

I can cook all kinds of food and the man asks for tuna casserole.  Totally sad.....

got some frozen chicken breasts out this morning and then was late home so did a quick Thai green curry with rice , 25mins from start to mouth and tasty ,have enough left for another night.

Neither of us is feeling particularly well so I made poached eggs on English muffins. I added cheese and Canadian (back) bacon.
